Ingredients
- 1 cup quinoa (optional)
- 1 tbsp curry powder
- 1/2 tbsp packed brown sugar
- 1/4 tsp cayenne pepper
- 2 cups peeled
- 2 tsp olive oil
- 1 tsp white sugar
- 1/4 tsp cinnamon
- 1 bunch fresh cilantro
- 1 cup fresh spinach
- 1/4 cup toasted pecan pieces
Steps
- Heat the oven to 425 F and place the peeled squash on a baking sheet.
- Toss the squash with olive oil, white sugar, cinnamon, and half the curry powder, then roast for 25 minutes.
- Rinse the quinoa, combine it with 2 cups water and the remaining curry powder, and simmer covered for 15 minutes.
- Stir the brown sugar and cayenne into the roasted squash while it is hot.
- Fold the spinach and cilantro into the warm quinoa, then divide it among bowls.
- Top the bowls with the squash and toasted pecans.
