Ingredients
- 3 cups kettle brand chips - i used buffalo bleu flavor
- 1 1/2 cups flour
- 2 eggs
- 1/4 cup half and half
- 1 lb boneless skinless chicken breasts
- olive oil
- honey mustard dipping sauce
Steps
- Heat the oven to 425 F and lightly oil a large baking sheet.
- Crush the chips and mix them with the cayenne in a shallow bowl.
- Whisk the eggs and half and half in a second bowl, then place the flour in a third bowl.
- Coat each chicken piece in flour, egg mixture, and crushed chips.
- Arrange the chicken on the baking sheet and bake for 18 to 20 minutes, until it reaches 165 F.
- Serve the hot chicken with the honey mustard sauce.
