Ingredients
- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground arbor chili powder
- 1/4 tsp kosher salt
- 3/4 cup extra virgin coconut oil
- 1 cup dark brown sugar
- 1 large egg
- 1/4 cup molasses
- 1/2 cup granulated sugar
- vanilla salt (optional)
Steps
- Heat the oven to 350 F and line two baking sheets with parchment.
- Whisk the flour, baking soda, cinnamon, ginger, chili powder, and salt in a medium bowl.
- Beat the coconut oil and brown sugar in a large bowl until smooth.
- Beat in the egg and molasses until fully combined.
- Stir in the dry mixture, then roll the dough into 24 balls and coat them with granulated sugar.
- Bake for 10 to 12 minutes, then cool the cookies on the sheets for 5 minutes.
