Ingredients
- 1 tbsp + 3/4 teaspoon salt
- 1 lb dried spaghetti
- 1/2 cup extra-virgin olive oil
- 1/3 cup thinly sliced garlic
- 1/2 tsp crushed red pepper flakes (optional)
- 1/3 cup fresh italian parsley
- 3/4 cup freshly grated parmigiano reggiano or pecorino romano cheese (optional)
Steps
- Bring a large pot of water and 1 tablespoon salt to a boil.
- Cook the spaghetti until tender, following the package time, then reserve 1 cup pasta water and drain.
- Warm the olive oil in a large skillet over medium heat and cook the garlic for 2 to 3 minutes.
- Stir in the red pepper flakes and 1/2 cup reserved pasta water, then simmer for 2 minutes.
- Add the spaghetti and toss for 2 minutes, adding more pasta water as needed.
- Stir in the parsley and cheese, then season with the remaining salt and pepper.
