- 6 flour tortillas
- 4 cans (4 oz) chopped green chiles
- 1 lb bulk pork sausage
- 2 cups shredded monterey jack cheese
- 10 large eggs
- 1/2 cup 2% milk
- 1/2 tsp each salt

Steps
- Heat the oven to 350 F and lightly oil a 9-by-13-inch baking dish.
- Cook the sausage in a large skillet over medium heat for 7 to 8 minutes, breaking it apart until it reaches 160 F.
- Layer the tortillas, green chiles, sausage, and Monterey Jack in the baking dish.
- Whisk the eggs, milk, salt, and paprika, then pour the mixture evenly over the layers.
- Bake for 45 to 50 minutes until the eggs are firm, rest for 10 minutes, and top with chopped tomatoes, sour cream, and salsa.
