Ingredients

1 1/2 cups warm water
1 tbsp granulated sugar
2 tsp salt
1 package active dry yeast
4 cups all-purpose flour
2 oz butter
10 cups water
2/3 cup baking soda
1 large egg yolk
kosher salt

Steps

Stir warm water, sugar, salt, and yeast in a bowl, then rest for 5 minutes.
Mix in melted butter and flour, then knead for 5 minutes until smooth.
Cover the dough and let it rise in a warm place for 60 minutes.
Heat 10 cups water with baking soda in a large pot, and heat the oven to 450 F.
Divide the dough into eight pieces, roll each into a rope, and twist each rope into a pretzel.
Boil each pretzel for 30 seconds, place them on a baking sheet, brush with egg yolk, and sprinkle with kosher salt.
Bake the pretzels at 450 F for 12 to 15 minutes.
