Ingredients
- 3 large sweet potatoes
- 3 cups vegetable broth
- 1 onion
- 4 cloves garlic
- 2 tsp each ground coriander
- 1/2 tsp salt
- 1 1/2 cups uncooked red lentils
- 1 can coconut milk
- 1 cup water
Steps
- Peel and cube the sweet potatoes, then place them in a slow cooker with the onion, garlic, lentils, coriander, salt, broth, and water.
- Stir the mixture until the lentils are evenly covered with liquid.
- Cover and cook on high for 4 hours, stirring once halfway through.
- Stir in the coconut milk, cover, and cook for 30 minutes more.
