2 lb oxtails
2 1/2 quarts water
6 peppercorns
2 bay leaves
2 stalks celery & leaves
1 onion
1 1/2 tsp salt
2 potatoes

1 cup quick-cooking barley
1 can (16 oz) diced tomatoes

Steps

Place the oxtails, water, peppercorns, bay leaves, celery, onion, and salt in a slow cooker.
Cook covered on low for 8 hours, until the beef is tender and reaches at least 145 F.
Add the potatoes, carrots, diced tomatoes, and barley.
Cook covered on high for 90 minutes, until the vegetables and barley are tender.
Remove the bay leaves and serve the soup hot.
