Ingredients

  • 1/4 cup plus 1 tbs light brown sugar
  • 2 tsp kosher salt
  • 1 tsp each: smoked paprika
  • 1/2 tsp ground black pepper
  • 1/4 tsp cinnamon
  • 1 3-4 pound flat-cut brisket
  • 2 cloves garlic
  • 1 bottle stout
  • 1/2 cup bourbon
  • 1 tbsp worcestershire sauce
  • 2 tbsp soy sauce
  • 2 tsp onion powder
  • 1/2 tsp each: celery salt & dried thyme
  • 1 1/4 cup apricot preserves
  • 1/2 cup bourbon
  • 1 tbsp soy sauce

Steps

  1. Mix the brown sugar, salt, paprika, pepper, cinnamon, onion powder, celery salt, and thyme.
  2. Rub the seasoning over the brisket and place it in a slow cooker.
  3. Stir the stout, one-half cup bourbon, Worcestershire sauce, soy sauce, garlic, and apricot preserves together, then pour them over the brisket.
  4. Cover and cook on low for 7 hours and 20 minutes, until tender and the beef reaches at least 145 F.
  5. Transfer the brisket to a board and rest it for 20 minutes.
  6. Stir the remaining bourbon and soy sauce into the slow cooker juices, then slice the brisket.
