Ingredients
- 3 cups frozen or fresh blueberries
- 3 1/2 tbsp brown sugar
- 1 lemon
- 2/3 cup all-purpose flour
- 1/4 tsp baking powder
- 1 pinch salt
- 1/2 cup unsalted butter
- 1/2 cup white sugar
- 1 egg
- 1/2 tsp vanilla extract
- vanilla ice cream for serving (optional)
- 1 cup powdered/confectioners sugar
- 3 tbsp light cream
Steps
- Heat the oven to 350 F and melt 2 tablespoons of butter in a 10-inch oven-safe skillet for 5 minutes.
- Toss the blueberries with brown sugar and lemon juice in the skillet, then spread them evenly for 3 minutes.
- Beat the remaining butter, white sugar, egg, and vanilla in a bowl until smooth for 5 minutes.
- Stir in the flour, baking powder, and salt, spread the batter over the berries, and bake at 350 F for 25 minutes.
- Whisk the powdered sugar, light cream, and almond extract, spread the frosting over the warm cobbler, and cool for 7 minutes.
