Ingredients
- 6 cups chicken broth
- 2 slices fresh ginger
- 2 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1/2 tsp garlic powder
- 3 cups frozen stir fry vegetables
- 3 packages ramen noodles
- 1 lb large shrimp
- sliced green onions (optional)
Steps
- Bring the chicken broth, ginger, soy sauce, sesame oil, and garlic powder to a boil in a large pot.
- Add the frozen vegetables and simmer for 5 minutes.
- Break in the ramen noodles and cook for the package time, usually 3 to 4 minutes.
- Add the shrimp and simmer for 3 to 5 minutes, until opaque and cooked to 145 F.
- Remove the ginger slices and serve the hot soup.
