1 lb butternut squash
2 large yellow bell peppers
1 large onion
2 zucchinis
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp italian seasonings
1/2 tsp chili powder
salt and black pepper (optional)
3 tbsp extra virgin olive oil
13 oz italian pork sausage - nitrate-free

Steps

Heat the oven to 425 F and line a large sheet pan with the vegetables and sausage.
Cut the squash, peppers, onion, and zucchini into bite-size pieces, then slice the sausage.
Toss everything with the olive oil, paprika, garlic powder, Italian seasoning, chili powder, salt, and pepper.
Spread the mixture in one layer and roast for 25 minutes.
Stir the pan and roast for 10 to 15 minutes more, until the vegetables are tender and the sausage reaches 160 F.
