- 1/2 lb brussels sprouts
- 1/2 large apple
- 1 1/2 tbsp olive oil
- 1/4 lb thick-cut bacon
- 1/2 cup dried cranberries
- 1/4 cup pumpkin seeds
- 1/4 cup feta cheese
- 1/4 cup olive oil
- 2 tbsp pure maple syrup
- 2 tbsp apple cider vinegar
- 1 tbsp stone-ground mustard
- 1/2 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Steps
- Cook the bacon in a skillet over medium heat for 8 to 10 minutes, turning once, until crisp.
- Drain the bacon, cool it briefly, and crumble it into small pieces.
- Thinly slice the Brussels sprouts and apple, then toss them with the cranberries, pumpkin seeds, feta, and bacon.
- Whisk both oils, maple syrup, vinegar, both mustards, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss until evenly coated.
