Ingredients
- 3 lb sweet potatoes
- 4 tbsp unsalted butter
- 4 cloves garlic
- 1 tbsp all-purpose flour
- 1/3 cup parmesan cheese
- 1 cup whole milk
- 1 cup heavy whipping cream
- 1 tsp sea salt
- 1/4 tsp ground black pepper
- 2 cups colby jack cheese
Steps
- Heat the oven to 375 F and slice the sweet potatoes into 1/8-inch rounds.
- Melt butter in a medium saucepan over medium heat, cook the garlic for 1 minute, whisk in flour, then add milk and cream.
- Simmer the sauce for 5 minutes, then stir in parmesan, salt, and pepper.
- Layer the sweet potatoes and sauce in a 13-by-9-inch baking dish, then cover with colby jack cheese.
- Cover the dish and bake for 40 minutes, then uncover and bake for 10 minutes until browned and tender.
