Ingredients
- 1 3/4 cup sweetened shredded coconut
- 1 large egg
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 tsp morton fine sea salt or table salt
- 2 tsp real coconut extract
- 2 cups all-purpose flour
- 28 soft caramels
- 3 1/2 tbsp heavy cream

Steps
- Heat the oven to 350 F and grease baking sheets with cooking oil.
- Separate the egg, beat the yolk with butter, granulated sugar, fine salt, and coconut extract, then stir in the flour.
- Shape the dough into 24 balls, dip each ball in the egg white, and coat it with shredded coconut.
- Place the balls on the baking sheets, press a thumbprint into each center, and chill for 20 minutes.
- Bake the cookies for 12 to 14 minutes, until lightly golden.
- Melt the caramels and heavy cream in a small saucepan over low heat for 4 minutes, stirring until smooth.
- Fill each cookie center with caramel and sprinkle with coarse salt if desired.
