Ingredients
- 1 cup salsa verde
- 4 large eggs
- kosher salt
- freshly cracked black pepper
- 1/4 cup cotija
- 1/4 cup fresh cilantro leaves (optional)
- 2 radishes (optional)
- warmed tortillas or toasted crusty bread (optional)
- lime wedges (optional)
Steps
- Heat the salsa verde in a 10-inch oven-safe skillet over medium heat for 5 minutes.
- Make four openings in the salsa and crack one egg into each opening.
- Season the eggs with salt and pepper, then cover the skillet and cook for 3 minutes.
- Bake uncovered at 375 F for 7 to 9 minutes, until the eggs are firm.
- Sprinkle the cotija and cilantro over the eggs before serving.
