- 1 cup flour
- 1/2 cup crushed graham crackers
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup butterscotch chips
- 1/4 cup chocolate chips
- 1/2 tsp cinnamon (optional)
- 1 cup buttermilk
- 1 egg
- 2 tbsp butter
- 1/2 tsp vanilla
- 1 jars (7 oz) marshmallow fluff
- 2 tbsp water
Steps
- Whisk the flour, graham cracker crumbs, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Whisk the buttermilk, egg, melted butter, and vanilla in another bowl, then stir them into the dry mixture.
- Fold in the butterscotch chips and chocolate chips, mixing just until combined.
- Heat a lightly buttered griddle to 350 F and cook the batter in small rounds for 2 to 3 minutes per side until puffed and cooked through.
- Warm the marshmallow fluff and water in a small saucepan over low heat for 3 to 4 minutes, stirring until smooth.
- Pour the warm marshmallow syrup over the pancakes.
