500 g trout fillets
7 cups water

2 bay leaves
100 ml vodka

Steps

Place the trout head and spine, water, onions, two carrots, allspice, peppercorns, and bay leaves in a large pot.
Bring the broth to a boil, then simmer uncovered for 45 minutes.
Remove the head, spine, bay leaves, and large solids, then return the broth to the pot.
Add the remaining carrots, potatoes, and salt, then simmer for 20 minutes until tender.
Add the trout fillets and simmer gently for 10 minutes, until the fish reaches 145 F and flakes easily.
Stir in the vodka, simmer for 5 minutes, and season with pepper.
