Ingredients

  • 2 1/2 lb flank steak
  • 2 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 2 large yellow onions
  • 2 1/2 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 lb cremini or baby bella mushrooms
  • 4 oz provolone cheese slices
  • 2 tbsp high-heat oil
  • 1 cup dry white wine
  • 4 small garlic cloves
  • 3/4 cup heavy cream
  • 1 tsp fresh thyme leaves
  • 2 tbsp salted butter
  • fresh flat-leaf parsley leaves (optional)

Steps

  1. Heat the oven to 375 F and place the flank steak between sheets of plastic wrap.
  2. Pound the steak to an even 1/2-inch thickness, then season both sides with salt and pepper.
  3. Melt 2 tablespoons butter with the olive oil in a large skillet over medium heat, then cook the onions for 20 minutes.
  4. Add the mushrooms and cook for 8 minutes, then spread the mixture over the steak and cover it with provolone.
  5. Roll the steak tightly from one long side and place it seam-side down in a 12-inch oven-safe skillet.
  6. Sear the roll in high-heat oil for 2 minutes per side, then roast for 30 minutes until it reaches 145 F.
  7. Rest the steak for 10 minutes, then simmer the wine, garlic, cream, thyme, and remaining butter in the skillet for 8 minutes before slicing.
