Ingredients
- 3 cups cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic
- 3 cups spinach
- 3 cups water
- 1 cup corn grits or polenta
- 4 oz goat cheese
- 1/2 tsp salt
Steps
- Heat the oven to 425 F and place the tomatoes and garlic in a 9-by-13-inch baking dish with 2 tablespoons oil.
- Roast the tomatoes for 35 minutes until softened and lightly browned.
- Bring the water to a boil in a 3-quart saucepan, whisk in the polenta and salt, and reduce the heat.
- Simmer the polenta for 30 minutes, stirring often, until thick and tender.
- Stir the spinach into the hot polenta for 3 minutes until wilted.
- Stir in the goat cheese and remaining oil, then top the polenta with the roasted tomatoes and garlic.
