- 4 chicken leg quarters
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 1/2 tsp sea salt
- 3/4 tsp black pepper
- 1/2 tsp brown sugar
- 1/2 tsp dried thyme leaves
- 1/4 cup salted butter
- 2 cloves garlic
- 1 tbsp fresh parsley
Steps
- Heat the oven to 425 F and place the leg quarters in a lightly oiled 9-by-13-inch baking dish.
- Mix the paprika, garlic powder, onion powder, salt, pepper, brown sugar, and thyme.
- Rub the chicken with olive oil and coat it with the seasoning mixture.
- Roast for 40 minutes, until the thickest parts reach 165 F.
- Melt the butter with the garlic, brush it over the chicken, and roast for 5 more minutes.
- Rest the chicken for 5 minutes and sprinkle it with parsley.
