Ingredients
- 4 lb whole chicken
- 1 lemon
- 1 orange
- 1 lime
- 6 sprigs rosemary
- 3 1/2 sprigs sage
- 4 cloves garlic
- 4 tbsp butter
- 1 tbsp salt
Steps
- Heat the oven to 425 F and place the chicken in a roasting pan.
- Rub the chicken with butter and salt, then fill the cavity with the lemon, orange, lime, garlic, rosemary, and sage.
- Roast the chicken for about 70 minutes, or until the thickest breast and thigh reach 165 F.
- Rest the chicken loosely covered for 10 minutes before carving.
