Ingredients
- 10 tbsp butter
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 large egg
- 1/2 tsp peppermint extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/8 tsp baking soda
- 1/2 tsp red gel food coloring
- 1/4 tsp green gel food coloring
Steps
- Heat the oven to 375 F and line baking sheets with parchment.
- Beat the butter, brown sugar, white sugar, egg, and peppermint extract until smooth.
- Stir in the flour, baking powder, salt, and baking soda until a soft dough forms.
- Divide the dough in half, tint one half red and the other half green, then roll each half into a rectangle.
- Place one rectangle over the other, roll them tightly into a log, and slice the log into 1/4-inch rounds.
- Bake the rounds for 9 to 11 minutes, until the edges are set, then cool them on the sheets.
