Ingredients
- 1/2 cup granulated sugar
- 2 tbsp flour
- 1 tbsp cornstarch
- 1 lemon
- 3 cups rolled oats
- 3 cups flour
- 2 cups brown sugar
- 1 tsp baking powder
- 1 1/2 cups melted butter
- 1/2 tsp salt
Steps
- Heat the oven to 350 F and line a nine-by-thirteen-inch pan with parchment.
- Cook the raspberries, granulated sugar, flour, cornstarch, and juice from the lemon in a saucepan over medium heat for 8 to 10 minutes, until thickened.
- Mix the oats, flour, brown sugar, baking powder, salt, and melted butter until crumbly.
- Press two-thirds of the oat mixture into the pan and spread the raspberry filling over it.
- Sprinkle the remaining oat mixture on top and bake for 45 to 50 minutes, until bubbling and golden.
- Cool the bars in the pan for at least 25 minutes before cutting.
