Rainbow Marshmallow Cookies

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup baking cocoa
  • 3/4 cup graham cracker crumbs
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 jar (7 oz) marshmallow creme
  • rainbow sprinkles

Steps

  1. Heat the oven to 350 F and line a baking sheet.
  2. Beat the butter and sugar, then mix in the egg and vanilla.
  3. Stir in the cocoa, graham cracker crumbs, flour, baking powder, and salt.
  4. Drop rounded spoonfuls onto the sheet and bake for 8 to 10 minutes.
  5. Cool the cookies completely, spread marshmallow creme on half of them, and sandwich with the remaining cookies.
  6. Roll the edges in rainbow sprinkles.
