Ingredients
- 1/2 cup whole wheat pastry flour
- 1/2 cup all purpose flour
- 1/4 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/8 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 tbsp butter
- 1 egg white
- 2 tbsp pumpkin puree
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips
Steps
- Heat the oven to 350 F and line a baking sheet with cooking oil.
- Whisk both flours, baking soda, pumpkin pie spice, and salt in a medium bowl.
- Beat the granulated sugar, brown sugar, butter, egg white, pumpkin puree, and vanilla in another bowl.
- Stir the dry mixture into the wet mixture, then fold in the chocolate chips.
- Drop 12 spoonfuls onto the baking sheet and bake for 12 to 15 minutes, until the cookies are set.
- Cool the cookies on the baking sheet for 5 minutes.
