- 1 tbsp avocado oil
- 1 cup unsweetened canned pumpkin puree
- 1/2 tsp salt
- 3/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp pumpkin pie spice blend
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 oz cream cheese
- 2 large eggs
- 1/8 cup milk
- 1/3 cup granulated sugar
- 2/3 cup all-purpose flour
- 4 tbsp melted unsalted butter
- 1 tsp ground cinnamon
- 1/8 tsp salt
- 3/4 cup powdered sugar
- 1 tbsp milk
- 1/4 tsp pure vanilla extract
Steps
- Heat the oven to 350 F.
- Coat a 9-inch square baking pan with avocado oil.
- Whisk the cream cheese, eggs, pumpkin, oil, milk, and both sugars until smooth.
- Stir the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin spice into the wet mixture.
- Mix the streusel flour, sugar, cinnamon, salt, and melted butter until crumbly, then sprinkle it over the batter.
- Bake the cake for 35 to 40 minutes, until the center is set.
- Stir the powdered sugar, milk, and vanilla together, then drizzle the glaze over the cooled cake.
