Ingredients
- 1/4 cup plain low-fat yogurt
- 1 oz blue cheese
- 1/4 tsp salt
- 1 dash ground white pepper
- 2 lb potatoes
- 1 large red onion
- 1 tsp olive oil
- 4 oz bacon
Steps
- Cut the potatoes into bite-size pieces and boil them in a large pot of salted water for 12 to 15 minutes, until tender.
- Cook the bacon in a large skillet over medium heat for 8 to 10 minutes, then drain and crumble it.
- Drain the potatoes and cool them under cold water for 5 minutes.
- Slice the red onion and crumble the blue cheese.
- Stir the yogurt, olive oil, salt, and white pepper in a large bowl.
- Fold in the potatoes, onion, bacon, and blue cheese, then chill for 5 minutes before serving.
