Ingredients
- 675 g baby red potatoes
- 125 ml frozen baby peas
- 6 slices bacon
- 4 green onions
- 1/2 red pepper
- 125 ml light cream cheese
- 125 ml 1% fat buttermilk
- 50 ml fresh dill
- sea salt (optional)
- fresh ground pepper (optional)
Steps
- Boil the baby potatoes in a large pot of water for 15 minutes, until fork-tender, then drain and cool slightly.
- Cook the bacon in a skillet over medium heat for 8 minutes, turning once, then drain and crumble it.
- Whisk the cream cheese, buttermilk, dill, salt, and pepper in a large bowl until smooth.
- Cut the warm potatoes into bite-size pieces and add them to the bowl with the peas, green onions, red pepper, and bacon.
- Toss gently until coated, then chill for 5 minutes before serving.
