Ingredients
- 1 lb yukon gold potatoes
- salt and pepper (optional)
- 2 1/2 tbsp unsalted butter
- 2 egg yolks
- 1/2 cup grated parmesan cheese
- 2 tbsp chopped fresh parsley (optional)
- 4 tbsp all-purpose flour
- 1 large egg
- 1 cup whole wheat breadcrumbs
- neutral oil (optional)
Steps
- Boil the potatoes in salted water until tender, about 15 minutes, then drain and mash them.
- Stir in the butter, egg yolks, parmesan, parsley, salt, and pepper until smooth.
- Shape the mixture into small logs and chill them for 10 minutes.
- Coat each croquette in flour, beaten egg, and breadcrumbs.
- Heat oil in a large skillet over medium heat and fry the croquettes for 3 to 4 minutes per side, until crisp and hot.
