Ingredients
- 60 ml olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 2 sprigs thyme
- 100 g baby lettuce leaves
- 250 g cherry tomatoes
- 3 chopped spring onions
- 1 chopped red chilli
- 1 pomegranate
- 50 g feta
Steps
- Whisk the olive oil, lemon juice, honey, thyme leaves, salt, and pepper in a small bowl.
- Halve the cherry tomatoes, slice the spring onions and chili, and remove the seeds from the pomegranate.
- Toss the lettuce, tomatoes, onions, chili, and pomegranate with the dressing in a large bowl.
- Crumble the feta over the salad, then chill it for 30 minutes before serving.
