Ingredients
- 250 g butter
- 200 g pistachio
- 80 g plain flour
- 1 tsp baking powder
- 225 g caster sugar
- 4 egg
- 1 tsp vanilla extract
- 100 g icing sugar
- 250 g mascarpone
- 200 ml double cream
- 100 g pistachio paste
- 400 g raspberries
- 1 unwaxed lime
Steps
- Heat the oven to 350 F and grease an 8-inch round cake pan.
- Grind the pistachios, then whisk them with flour and baking powder.
- Beat the butter and caster sugar until smooth, then beat in the eggs and vanilla one at a time.
- Fold in the pistachio mixture and lime zest, then spread the batter in the pan.
- Bake for 30 minutes, then cool the cake in the pan for 10 minutes.
- Whip the mascarpone, double cream, icing sugar, and pistachio paste until thick, spread it over the cooled cake, and top with raspberries.
