Pineapple Sunshine Cake

Ingredients

  • 1 box yellow cake mix
  • 4 large eggs
  • 2 tbsp sour cream
  • 1/2 cup melted butter
  • 1 cans (8 oz) crushed pineapple in juice (optional)
  • 1 box instant vanilla pudding mix
  • 1 containers (8 oz) whipped topping

Steps

  1. Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
  2. Beat the cake mix, eggs, sour cream, melted butter, and optional pineapple with its juice until smooth.
  3. Spread the batter in the pan and bake for 30 to 35 minutes, until a toothpick comes out clean.
  4. Cool the cake in the pan for 90 minutes.
  5. Whisk the pudding mix with water as directed by the package, fold in the whipped topping, and spread it over the cooled cake.
  6. Chill the cake for 60 minutes before cutting.
