Ingredients
- 1 can (20 oz) crushed pineapple with juice
- 1 1/2 cups granulated sugar
- 6 tbsp cornstarch
- 2 tbsp fresh lemon juice
- 2 tsp lemon zest
- 1/4 tsp salt
- 1 egg egg white
- 1 package (14 1/8 oz) double-crust pie pastry
- 2 tbsp heavy cream
- 1 tbsp coarse sugar
Steps
- Heat the oven to 425 F and fit one pie pastry into a 9-inch pie pan.
- Whisk pineapple with its juice, sugar, cornstarch, lemon juice, lemon zest, and salt in a saucepan, then cook over medium heat for 5 minutes until thick.
- Pour the pineapple filling into the crust, cover with the second pastry, and cut several vents.
- Brush the pastry with heavy cream and sprinkle with coarse sugar.
- Bake at 425 F for 15 minutes, reduce the heat to 350 F, and bake 30 to 35 minutes until golden; cool before slicing.
