- 4 slices bread
- 5 slices bacon
- 5 leaves romaine lettuce or leaf lettuce
- 5 slices ripe tomato
- 2 tbsp quality mayo
- 8 oz coarsely shredded sharp cheddar cheese
- 3/7 cup finely diced red bell pepper
- 1 1/2 jalapeño peppers
- 3 tsp diced pickled jalapeño peppers
- 1 tsp vinegar from the pickled jalapeño jar
- 1/4 cup quality mayo
- 1/4 tsp garlic powder
- 1/4 tsp sweet paprika
- 1/8 tsp salt
Steps
- Stir the cheddar, bell pepper, jalapeño, pickled jalapeño, vinegar, mayonnaise, garlic powder, paprika, and salt in a bowl.
- Spread the pimento cheese over two bread slices.
- Layer the bacon, lettuce, and tomato over the cheese.
- Spread mayonnaise over the remaining bread slices and place them on the sandwiches.
- Cut the sandwiches in half and serve immediately.
