Ingredients
- 150 g peaches
- 1 tsp cinnamon
- 2 eggs
- 1/2 tsp vanilla bean paste
- 15 g coconut oil
- 30 g oat flour
- 30 g gluten-free flour
- 1 tsp baking powder
- generous pinch of salt
- 1/2 tsp turbinado sugar (optional)
- 1 tbsp coconut butter + milk or water to thin (optional)
Steps
- Dice the peaches and toss them with cinnamon.
- Whisk the eggs, vanilla paste, oat flour, gluten-free flour, protein powder, baking powder, and salt.
- Fold the peaches into the batter.
- Heat the coconut oil in a skillet over medium heat.
- Spoon four fritters into the skillet and cook for 3 to 4 minutes per side, until golden and the centers reach 165 F.
- Sprinkle with turbinado sugar if using.
