- 3 cups mashed potatoes
- 1/4 cup parmesan cheese
- 1 egg
- 6 tbsp flour divided
- 1 tbsp grated onion or green onion
- 1 tbsp fresh chopped parsley
- canola oil to saute
Steps
- Mix the mashed potatoes, Parmesan, egg, 4 tablespoons flour, onion, and parsley in a bowl.
- Shape the mixture into eight small pancakes and coat them with the remaining flour.
