Ingredients
- 1 tsp salted butter
- 1 onion
- 2 cloves garlic
- 1 1/2 lb yellow potatoes
- 1 can (14 1/2 oz) diced tomatoes
- 1/2 cup vegetable broth
- 2 tbsp curry powder
- 1/2 tsp red pepper flakes (optional)
- 1/2 lb paneer
Steps
- Melt the butter in a 4-quart pot over medium heat and cook the chopped onion for 5 minutes.
- Add the garlic and cook for 1 minute.
- Stir in the potatoes, tomatoes, broth, curry powder, and red pepper flakes, then bring the mixture to a boil.
- Cover the pot, lower the heat, and simmer for 15 minutes, until the potatoes are tender.
- Add the paneer, cover the pot, and simmer for 5 minutes, until the cheese is hot.
