2 large eggs
2 tsp vanilla
1 cup unsalted butter
2 tsp vanilla
1 pinch salt
4 cups powdered sugar
5 tbsp whole milk

Steps

Heat the oven to 350 F and lightly grease two baking sheets.
Whisk the flour, baking soda, cream of tartar, and salt, then beat the sugars, butter, oil, eggs, and vanilla together and mix in the dry ingredients.
Drop rounded spoonfuls of dough onto the sheets and bake for 9 to 11 minutes, until the edges are lightly golden and the centers are set.
Cool the cookies on the sheets for 5 minutes, then move them to a rack to cool completely.
Beat the butter, vanilla, salt, powdered sugar, and milk until smooth, then spread the frosting over the cooled cookies.
