Ingredients
- 1 jars (25 1/4 oz) delallo marinara or homemade marinara
- 1 tbsp extra virgin olive oil
- 1/4 cup minced shallot
- 2 cloves garlic
- 1 tsp crushed red pepper
- 3/4 cup dry white wine
- 3 lb 48 to 50 live mussels
- 2 tbsp chopped parsley (optional)
- optional whole wheat crusty bread
Steps
- Rinse the mussels under cold water, remove beards, and discard cracked shells or shells that stay open when tapped.
- Heat the olive oil in a large pot over medium heat, then cook the shallot and garlic for 2 minutes.
- Stir in the red pepper, marinara, and white wine, and simmer uncovered for 8 minutes.
- Add the mussels, cover the pot, and steam for 7 to 9 minutes until the shells open.
- Discard any mussels that remain closed, stir in the parsley, and serve hot.
