Ingredients
- 14 oz strozzapreti pasta
- 20 oz marinara sauce
- 1 lb littleneck clams
- 1/2 cup light or regular cream
- 1/3 cup grated parmesan cheese
- 1 1/2 cloves garlic
- chopped fresh basil for garnish (optional)
- 1/3 cup vodka (optional)
Steps
- Rinse the clams under cold water and discard cracked shells or shells that stay open when tapped.
- Boil a large pot of salted water, add the strozzapreti, and cook for 9 to 11 minutes until tender.
- Cook the garlic in a large skillet over medium heat for 1 minute, adding the vodka if using.
- Stir in the marinara and cream, then simmer the sauce for 4 minutes.
- Add the clams, cover, and cook for 5 to 6 minutes until the shells open.
- Drain the pasta, toss it with the sauce and parmesan, and discard any clams that remain closed.
