Ingredients
- 15 chicken thighs
- 1/2 large onion
- 1 cup mayonnaise
- 1 tsp salt
- 1 tbsp mrs dash or your favorite salt-free seasoning
- 1 lb mushrooms
- 1/2 large onion
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp flour
Steps
- Heat the oven to 375 F and grease a 9-by-13-inch baking dish with oil.
- Cook the mushrooms and half the onion in olive oil with salt and pepper over medium heat for 10 minutes, then stir in the flour.
- Mix the mayonnaise, remaining onion, salt, and seasoning in a bowl.
- Open each chicken thigh, spoon in the mushroom mixture, and fold the meat around the filling.
- Arrange the stuffed thighs in the baking dish and spread the mayonnaise mixture over them.
- Bake for 55 to 65 minutes, until the thickest thighs reach 165 F.
- Rest the chicken for 10 minutes before serving.
