Ingredients
- 12 oz bowtie pasta
- 1 can (14 1/2 oz) diced tomatoes with green chiles undrained
- 2 1/2 cups chicken broth
- 2 cups shredded rotisserie chicken
- 1/2 cup barbecue sauce
- 1 cup shredded monterey jack or cheddar cheese
- 4 strips bacon
- 2 tbsp sliced green onions
Steps
- Cook the bacon in a 5-quart pot over medium heat for 5 to 6 minutes, then crumble it.
- Add the pasta, diced tomatoes with their liquid, chicken broth, and barbecue sauce.
- Bring the mixture to a boil, then cover and simmer for 10 to 12 minutes, stirring often, until the pasta is tender.
- Stir in the chicken and cook for 2 minutes until hot.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Sprinkle on the cheese and bacon, cover for 1 minute, and top with green onions.
