- 6 boneless chicken breasts
- 1/2 cup honey
- 1/2 cup dijon mustard
- 1 lemon
- 1 tsp paprika
- red pepper flakes (optional)
- salt (optional)
- 1 lb bacon
- 3 tbsp reserved bacon grease
- 2 cups sharp cheddar cheese
Steps
- Whisk honey, Dijon mustard, lemon juice, paprika, and salt in a bowl, coat the chicken, and refrigerate it for 60 minutes.
- Heat the oven to 400 F, arrange the bacon on a rimmed baking sheet, and bake it for 20 minutes.
- Reserve 3 tablespoons of bacon grease, lower the oven to 375 F, and place the chicken in a 9-by-13-inch baking dish.
- Pour the reserved grease over the chicken and bake it for 35 minutes.
- Top the chicken with cheddar and crumbled bacon, then bake it for 5 minutes until the cheese melts and the chicken reaches 165 F.
- Rest the chicken for 10 minutes before serving.
