Ingredients
- 3/4 cup almond flour
- 1/2 cup spelt flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/8 tsp salt
- 2 tbsp molasses
- 1/4 cup honey
- 1/2 tsp vanilla extract
- 1 egg
- 1 tbsp melted coconut oil
- 1/3 cup dark chocolate
- 2 tbsp sugar
- 1/2 tsp cinnamon
Steps
- Stir the almond flour, spelt flour, baking soda, cinnamon, ginger, and salt in a bowl.
- Mix the molasses, honey, vanilla, egg, and melted coconut oil in another bowl.
- Stir the wet mixture into the dry mixture, then fold in the dark chocolate.
- Cover and chill the dough for 2 hours.
- Heat the oven to 350 F and mix the sugar with the remaining cinnamon.
- Shape the dough into 12 balls, roll them in the cinnamon sugar, and place them on a baking sheet.
- Bake for 10 to 12 minutes, until the centers are set and the egg is fully cooked.
