2 tsp baking soda
1/4 tsp salt

1 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground cloves
1/8 tsp freshly ground black pepper
3/4 cup unsalted butter
1/4 cup + 2 tbsp granulated sugar
1/4 cup + 2 tbsp light brown sugar
1 egg
1/3 cup unsulphured molasses
1/2 cup raw sugar

Steps

Heat the oven to 350 F and line two baking sheets with parchment.
Whisk the flour, baking soda, salt, ginger, cinnamon, allspice, cloves, and pepper in a bowl.
Beat the butter, granulated sugar, and brown sugar until smooth, then beat in the egg and molasses.
Stir the dry mixture into the butter mixture until a soft dough forms, then chill it for 10 minutes.
Shape the dough into small balls, roll them in the raw sugar, and place them on the baking sheets.
Bake for 10 to 12 minutes, until the cookies are set, then cool them on the sheets for 5 minutes.
