Ingredients

1 1/4 cups milk
6 large eggs
1 1/4 cups all-purpose flour
scant 1/2 tsp salt
1 1/2 tsp vanilla extract
4 1/2 tbsp unsalted butter

Steps

Heat the oven to 425 F and divide the butter among 18 cups of two muffin pans.
Melt the butter in the oven for 2 minutes, then remove the pans.
Blend the milk, eggs, flour, salt, and vanilla until smooth.
Pour the batter into the hot muffin cups, filling each about halfway.
Bake for 12 to 15 minutes, until puffed, browned, and firm with centers reaching 165 F.
Cool the mini pancakes in the pans for 2 minutes before removing them.
