Ingredients

1/4 cup olive oil
2 poblano peppers
1 small white onion
3 cups chopped kale
3 cloves garlic
1 bunch cilantro
3 cups chicken broth
1 tsp kosher salt
1 1/2 cups jasmine rice
1 lime

Steps

Heat a large dry skillet over medium-high heat and char poblanos for 8 minutes, turning often.
Remove the poblano stems and seeds, then blend the peppers with onion, kale, garlic, cilantro, chicken broth, salt, and lime juice.
Heat olive oil in a 4-quart saucepan over medium heat and toast the rice for 4 minutes.
Pour in the green mixture, bring it to a boil, and stir once.
Cover the saucepan and simmer over low heat for 25 minutes, until the rice is tender.
Turn off the heat, rest the rice covered for 5 minutes, and fluff it gently.
