Ingredients
- 3/4 lb italian turkey sausage links
- 1 onion
- 2 cloves garlic
- 1 can no-salt-added diced tomatoes
- 1/4 cup greek olives
- 1 tsp dried oregano
- 1/2 cup quinoa
- 3 cups fresh baby spinach
- 1/2 cup crumbled feta cheese
Steps
- Remove the turkey sausage from its casings and cook it in a large skillet over medium heat for 6 minutes.
- Add the onion and garlic, then cook for 4 minutes until softened.
- Stir in the tomatoes, olives, oregano, quinoa, and 1 cup water.
- Cover the skillet and simmer over medium-low heat for 20 minutes, until the quinoa is tender and the sausage reaches 165 F.
- Stir in the spinach and cook uncovered for 3 minutes, then sprinkle the feta over the skillet.
