Ingredients
- 4 sweet potatoes
- 4 slices thick cut bacon
- 1 tbsp brown sugar
- 3 tbsp melted butter
- 4 tbsp half and half
- 1 egg
- 1 1/2 tsp orange zest
- 2 tbsp maple syrup (optional)
- 1/2 tsp kosher salt
- 1 cup white cheddar cheese
Steps
- Heat the oven to 400 F and bake the sweet potatoes on a baking sheet for 45 to 50 minutes, until tender.
- Cook the bacon in a skillet over medium heat until crisp, then crumble it.
- Cool the potatoes for 10 minutes, scoop out the centers, and mix them with butter, half-and-half, egg, orange zest, maple syrup, brown sugar, and salt.
- Fold in the bacon, spoon the mixture into the potato skins, and place them on a baking sheet.
- Top with cheddar and bake at 400 F for 15 to 20 minutes, until the cheese melts and the egg is firm.
